Low fat chocolate souffle - in 5 easy steps

If you crave a chocolatey dessert but don't want to deal with the fat and calories that come with it, this easy to make chocolate souffle with less than 4 grams of fat per serve is perfect. 


Not only is this low in fat, but it's actually super yummy and doesn't taste "low fat". I know, because the husband says so...  he is one of those naturally slim people that never gains weight no matter how much he eats. So it goes without saying that he has an intense dislike of all things deemed low fat. But he has given this souffle his tick of approval! 

So now to the recipe, which is a mash up of a few recipes I found online and customised to suit my fussy needs 

You Need
  • 5 tablespoons caster sugar
  • 1 tablespoon flour (make sure you don't put more than a tablespoon otherwise it'll make the souffle too heavy)
  • 1.5 tablespoons cocoa powder (if you use a sweetened variety, just use 1 less tablespoon of sugar unless you want it really really sweet)
  • 2 tablespoons low fat / skinny milk
  • 1/4 teaspoon vanilla essence
  • 2 egg whites
  • 1 teaspoon icing sugar


How to make it

  • STEP 1: Combine 3 tablespoons caster sugar, flour, cocoa, and milk in a small saucepan over medium heat. Cook 2 minutes, stirring until smooth. Spoon chocolate mixture into a medium bowl; cool 4 minutes. Stir in vanilla.
  • STEP 2: Beat the egg whites with a mixer at high speed until soft peaks form. Add remaining 2 tablespoons caster sugar  and beat until stiff peaks form. The mixture should look like a fluffy white meringue. 
  • STEP 3: Combine the chocolate mixture (from step 1) with the egg mixture (from step 2), stirring quickly until just combined. Don't over mix as you want to make sure the mixture is light and airy.
  • STEP 4:  Coat 2 ramekins with cooking spray. It's important you don't skip this step, as you want to make sure the souffle doesn't stick to the sides and can rise up. 
  • STEP 5: Spoon the mixture into the ramekins and sharply tap the dishes 2 or 3 times to level it (I didn't tap mine hard enough which is it looks a bit 'mountain-ous'). Place on a baking tray and bake at 180°C for 15 minutes or until puffy and set. Sprinkle each souffle with 1/2 teaspoon powdered sugar. Serve immediately.
Still in the oven, ready to be removed.


The souffle will start to drop very soon after you take it out of the oven, so make sure you serve immediately if you still want them to look good.

  2. What a great recipe. I'm about to start a low-carb/cal thing and I could easily make these using Splenda instead of sugar - then my only slip up would be the flour.

  3. Thanks Leah - I haven't been making any desserts lately (trying to be healthy), so this was a great low fat option).

    @Kath - Considering it's only 1 tablespoon of flour for 2 x serves it's not too much of a slip up! Let me know how it turns out.
