Recipe - Low fat rum balls perfect for the weekend!

I'd made these rum-balls to take with me to my friend's NYE party but only just got around to posting it. They're simple and easy to make, and work out around 3gr of fat per rum ball so perfect for getting rid of those chocolatey cravings without the guilt factor!

Ingredients
  • 1 x ready made madeira cake - it's important that you use madeira, because you need a really moist cake in this recipe
  • 3/4 x tin of condensed milk - I use the 99% fat free version
  • 4 tbs cocoa powder
  • 1 pkt chocolate sprinkles
  • 1/4 pkt of any dry biscuits, I generally like the coffee flavoured ones
  • 1/4 cup of rum



To make
  • Crumb the cake and 1/4 pkt of biscuits together. Don't make the crumbs too small as you want to leave some chunky texture.
  • Add the cocoa powder and mix until combined

  • Add the rum and mix well
  • Start adding the condensed milk until you end up with a sticky gooey mixture. Depending on how moist the cake is you might only need 1/2 the tin.
  • Mix everything together really well
  • Wash hands and start making 3cm balls out of the mixture - if you find the mixture sticks to your hands, just wet your hands in between making the balls as this will make it less sticky to your skin.
  • Pour the chocolate sprinkles in a bowl, and dip the ball in sprinkles until fully covered.

  • Chill in the fridge for 1hr before eating



Makes 30-40 depending on the size
